Milk management

Here i have another interesting photograph for you. Yes the guy on the motorbike with tin cans is a milkman, the tin cans are holding milk n this guys gives doorstep delivery service to his clients.

The milk you get from him is generally pure without any pasteurisation or homogenisation processes. So in India women are required to do this complete milk management.

When the milk comes it has to be boiled first so that any bacterias in it are killed and milk is ready for consumption, then from that milk daily yoghurt is made. Also when u boil milk you get a thick layer of cream on top. This layer is removed daily and stored in Refrigerator then after u have collected enough butter is made out of it. The task is not yet finished if u have loads of butter and havent finished consuming it you can also make ghee (butter schmalz) out of it. So here where we pick up processed milk, buy tubs of yoghurt, slabs of butter and tns of ghee, in India in most fo the places all these things are made at home.

Though this time when i went to India, it was very different to note that my mom also had got used to buying tubs of yoghurt which tasted great and also had a low fat content of 3% fat like the yoghurts available here. Things are changing there as well though al these things are accepted and used mostly in urban India where as now both partners are working, people dont want to watse time on all these stuff.

Garbage Collector: Another guy which you notice in the above picture is our dustbin collector, he goes from house to house every morning collecting garbage.
